My best friend’s mother in-law cooked dinner last night and we had meat loaf. I had forgotten how much I loved it so I thought that I would do that for my recipe this month. Hope you enjoy it as much as I did!
Old-fashioned Meat Loaf
1 pound ground beef
1-1/4 teaspoons salt
1/4 teaspoon ground pepper
1/2 cup chopped onion
1 egg, lightly beaten
8 ounces canned tomato sauce or diced tomatoes in juice
1/2 cup quick-cooking oats or 3/4 cup fresh bread crumbs
Preheat oven to 375 degrees F.
If using bread crumbs place day old bread in work bowl of the food processor and process until finely ground. Transfer crumbs or oats to a large bowl. Add all other ingredients. Mix well and place in a baking dish. Shape into a loaf.
Prepare topping:
1/3 cups ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Mix topping ingredients and spread on loaf. Bake for 1 hour.
