Quick Chicken & Dumplings

With the days getting longer, here is a quick easy recipe for a no fuss kind of meal.

7 cups of water
4 boneless chicken breasts
2 (10-1/2 oz) cans of Cream of Chicken Soup
1 10 oz roll of canned biscuits
Salt and pepper to taste

Boil chicken in water until done, approximately 10-15 minutes at hard boil. Remove chicken from water and reserve 5 cups of the water. Chop chicken into bite size pieces and return to water. Add cream of chicken soup and stir to dissolve. Bring back up to a boil. Open canned biscuits and separate each biscuit into two biscuits by halving horizontally. Cut each half into two pieces and drop one by one into the boiling water mixture. Add salt and pepper to taste. Lower the heat and simmer for 15 minutes. Enjoy. Amy Kellogg
