In the Kitchen with Amy

One of the most popular features of our monthly newsletter is Amy’s recipe column. Due to that fact, we have decided to give Amy her own “place in the kitchen” on our website. Broccoli Corn Bread

2 boxes Jiffy mix
4 eggs
1 1/2 sticks of butter, melted
10 ounce frozen broccoli, chopped
10 ounces cottage cheese
1 medium onion, finely chopped
Preheat oven to 350 degrees. Melt butter in a 9 x 13 inch
pan. Combine all ingredients, including butter and pour
into the 9 x 13 inch greased pan and bake at 350 degrees for about 45 minutes.
